vegan berry cupcakes

blueberries are my favorite thing! i love blueberries. i could honestly sit and eat an entire box of blueberries at once. so with a big family holiday party coming up tomorrow and blueberries on sale at my local grocery store, i couldn’t resist whipping these up to share :)

VEGAN BERRY CUPCAKES

1 3/4 c. flour
1 tsp. baking soda
1 c. sugar
1/4 c. applesauce
1/4 c. almond milk
1/2 c. vegetable oil
1/2 tsp. vanilla
1 c. fresh berries

mix flour, baking soda and sugar in a small bowl. in a larger bowl, beat together applesauce, almond millk, oil and vanilla until well-blended

now for the blueberries! i have used this recipe with other berries too, and it’s just as delicious; raspberries, blackberries, and just about any other berry are all fair game

this is the perfect recipe for breaking in my new mortar and pestle! so excited

crush the blueberries. the only big pieces remaining should basically be skin. if you liked you can crush them with sugar to taste, but i didn’t add any sugar to mine. add the crushed berries to the wet mixture, and mix. beat in the flour mixture until smooth, but with berry pieces still visible. bake at 350* for 22-26 minutes

they smelled awesome coming out of the oven!

so pleased with how they turned out! more moist and sweet than a blueberry muffin for sure, and the frosting sealed the deal

vegan minty cocoa cookies

VEGAN MINTY COCOA COOKIES

2 1/4 c. flour
1 tsp. salt

1 tsp. baking soda

3 tbsp. cocoa powder
1 c. margarine

3/4 c. sugar
3/4 c. brown sugar
1 tsp. vanilla
1/2 c. unsweetened applesauce
1 box (12-count) candy canes

combine flour, salt and baking soda in a small bowl. beat together margarine and sugars until smooth. add vanilla to butter and sugar mixture, then add the applesauce 1/4 c. at a time, beating til smooth. gradually add the flour mixture as well, continuing to mix until smooth

this part is important! BEWARE OF CRAZY NEIGHBORS mine came and yelled at me because it sounded like i was “moving furniture or hammering something.” oops! i did primarily use a potato masher to hand-smash these with love, so i guess that was called for. unfortunately this bitch also yelled at us one time when the building’s pipes all burst (not our fault), and another time she accused my 5’6” 140 lbs (i don’t believe him i think it’s less - point is he’s tiny) boyfriend of trying to rape her SHE CRAY CRAY

HOPEFULLY I WILL GET THAT MORTAR AND PESTLE I WANT FOR CHRISTMAS SO I CAN AVOID SITUATIONS LIKE THIS HMMM ;)

well in any case, after she yelled at me i used a rolling pin for the rest, and that worked fine too. although it was not as cathartic. smash your candy canes however you want guys live on the edge!

FINALLY, after vanquishing the evil girl downstairs, mix in candy cane bits evenly. at this juncture, mine needed to firm up a bit, so i stuck the dough in the fridge for about 20 minutes. once it hardened up just a bit, i baked the cookies at 375* for about 9 minutes

PROTIP baking cookies with candy in them can be a test of patience because the candy will melt and stick to the baking pan. i highly recommend using parchment paper and waiting for the cookies to cool a little bit before pulling them off; otherwise they’ll stick and fall apart!

overall i’m super pleased with these! they are kind of cakey and chewy, but taste like thin mints mmm :) and 100% vegan-friendly to boot
