vegan carrot cake
this weekend i’m heading to the west coast for the first time ever! my seattle-bound flight leaves norfolk early thursday morning, and i can’t wait!
unfortunately, the original intent of my visit was to see my dear friend michelle on her 21st birthday - and since i bought my plane tickets, she up and moved home! not that i’m complaining, i’m sure i’ll have a blast. but the downside is of course that i’ll be missing her big day
in order to make up for this, i’m surprising her with a delicious cake. i heard her recently gush over carrot cake, so carrot cake it is :)
VEGAN CARROT CAKE
vegetable shortening
2 c. flour
2 c. sugar
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. salt
2 c. applesauce
1 1/2 c. vegetable oil
3 c. shredded carrots
grease baking pans with shortening
in a large bowl, combine flour, sugar, baking soda, cinnamon and salt. add applesauce and vegetable oil, and mix until well-combined. add the carrots, and mix well! (protip: i cheated and bought a bag of pre-shredded carrots - so easy!)

bake at 350* for 40 minutes. while this cake was in the oven, my whole apartment smelled like yummy cinnamon goodness!

after the cake cooled, i iced it with my favorite buttercream frosting [http://feganbaking.tumblr.com/post/14737510079/vegan-buttercream-frosting]

i also used gold and silver sprinkles for a sassy touch! :)
this was an awesome one bowl cake recipe - so simple, so delicious! highly recommend for everyone, vegan or not
