vegan yellow cake
my friend monica’s birthday was last week, and since she spent the weekend in new york city (lucky!), we’re throwing her a surprise birthday party tonight under the guise of a christmas party. SHHHH DON’T TELL
i had my boyfriend do some snooping to figure out her favorite type of cake, and she was oddly unspecific, saying she usually likes “cake that isn’t fruity and has chocolate frosting.” ok monica, i’m on it!
VEGAN YELLOW CAKE
1/2 c. vegetable shortening
2 1/4 c. flour
1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
1 c. almond milk
1/2 c. applesauce
1 1/2 tsp. vanilla
stir shortening to soften. mix in flour, sugar, baking powder and salt. add 2/3 c. almond milk, and then beat for about a minute to make sure it’s well-mixed. add remaining 1/3 c. almond milk, applesauce and vanilla, and mix until smooth. i baked mine as a 13x9 sheet cake - 350* for 30 minutes

since i’m baking for an entire party, i got a little lazy and used store-bought frosting instead of homemade. but duncan hines whipped chocolate frosting is vegan-approved!

since it’s so close to christmas, we combined our christmas party with monica’s birthday party. so obviously, christmas cake decorations were in order

this was a quick and easy one-bowl cake recipe - great for a last-minute party scenario :)
