vegan “funfetti” cupcakes: CHRISTMAS EDITION!!!!
LET IT BE KNOWN! i have a serious sprinkles fetish. sugar cookies are my favorite just because i get to use sprinkles for decorating. when i go to my favorite frozen yogurt place where i get to add my own toppings, i take the cap off the sprinkles jar and go nuts. before halloween i went into target and they had christmas stuff out already (which normally, i’m seriously opposed to) including TONS OF SPRINKLES so i spent $30 on christmas sprinkles and i was so happy
“funfetti” is all about the sprinkles. that and the fact that it’s my boyfriend’s favorite make it one of my favorite recipes. thus, a christmas version is completely necessary. I LOVE MY BOYFRIEND I LOVE CHRISTMAS I LOVE SPRINKLES WOOOOOO
originally, when asked to make funfetti cake for him, i was appalled! bake from a box WTF?! until i found this : http://cupcakerehab.com/. they have an AMAZING “funfetti” recipe that’s to die for, and my veganized version is just as yummy :)
VEGAN “FUNFETTI” CUPCAKES
1 1/4 c. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
3/4 c. sugar
6 tbsp. margarine
3/4 c. applesauce
1 tsp. vanilla
1/2 c. almond milk
2 tbsp. SPRINKLES<3 (that’s a bare minimum)
frosting and cute toppings
combine flour, baking powder and salt. in a giant bowl, beat the sugar and margarine together until well-combined. add the applesauce 1/4 c. at a time until smooth, then add and mix in vanilla. gradually at the flour mixture in three additions, alternating with the almond milk in two additions, ending with the flour mix. (this may not be COMPLETELY necessary, but why mess with success?) fold in the sprinkles

cupcake pan liners are ok but i don’t really believe in using them because they cost money and you just throw them away and it’s one more thing standing between you and your cupcake DUH. so i just line the pan with a little vegetable shortening to they don’t stick :) bake at 350* for 17-20 minutes

let them cool and then decorate your heart out!
